Banana Fry

Banana fry is one of the easiest side dish for Sambar rice, Rasam rice, coconut rice, lemon rice, curd rice and Puliyogare (puliyodarai).
It is easy to prepare with in 15 minutes. Try to make Banana fry.

Ingredients of Banana Fry

Chopped Banana - 1 cup (Cut it in circle shapes)
Minced Garlic - 5 pods
Curry leaves - few
Asafoetida - 1 pinch
Chilly powder - 1 tsp
Coriander powder - 1/2 tsp (optional)
salt to taste
oil - as required

Methods of Banana Fry

Heat pan with required oil, add garlic fry till it turn golden brown color.

Add curry leaves and asafoetida fry slightly.

Now add chopped banana, suate well.

Add salt, chilly powder and coriander powder, mix well.

Sprinkle some water and closed tightly.

After 5 minutes suate the banana fry till it turn in golden brown color.

Servre Banana fry with sambar rice, Rasam rice, coconut rice, lemon rice, curd rice and Puliyogare (puliyodarai).

Pickle powder


Ingredients of Pickle powder

Red chilly powder - 1 cup
Roasted and ground Mustard powder - 1 cup
Roasted and ground fenugreek seed - 1 tbsp
Salt - 1/2 cup
Asafoetida - 2 pinch

Methods of Pickle powder

Just mix well all the ingredients.

Store Pickle powder in an airtight container.

Pickle powder is ready to make any pickles.

Take chopped green mango cut in to cubes. Add pickle powder and mix well.

Then add sesame oil and mix well.

Pickle powder is used to prepare fresh green mango pickle, lemon pickle, goose berry pickle, green chilly pickle and so on.

Chat masala powder


Ingredients of Chat masala powder

Coriander seeds - 1/2 cup
Amchur powder - 1/2 cup
(Dry Mango powder)
Cumin seed - 1/2 cup
Salt - 1/4 cup
Dry red chilly - 20
Black Salt - 1 tbsp
Pepper - 1 tbsp

Methods of Chat masala powder

Heat pan, roast red chilly and fry untill the change color.

Then add and roast cumin seed and coriander seed.

Grind all the ingredients in to a fine powder.

Store Chat masala powder in an airtight container.

Use Chat masala powder for fruit salad, vegetable salad, raitha, Bhel puri, pani puri and so on.

Chat masala powder given rich taste for all chat recipes and salad.

Kerala Paruppu Podi (Powder)


Ingredients of Kerala Paruppu Podi (Powder)

Split chick peas (Pottukadalai) - 2 cups
Dry red chilly - 25
Grated coconut - 1 cup
Curry leaves - 1/4 cup
Mustard seed - 2 tbsp
Salt to taste
oil 2 tbsp

Methods of Kerala Paruppu Podi (Powder)

Heat pan, roast red chilly, grated coconut and fry separately untill the change color.

Keep aside when it cool, then grind the red chilly, coconut, Split chick peas (Pottukadalai) and salt.

Grind all the ingredients in to a fine powder.

Then heat pan with 2 tbsp of oil add mustard seed, after spluttering add and roast curry leaves until slightly crispy.

Take this mixture mix with the Kerala Paruppu Podi (Powder).

Store it in an airtight container when it cool.

Serve Kerala Paruppu Podi (Powder) mixed with hot steam rice and add required oil
to taste.

Andra Paruppu Podi (Powder)


Ingredients of Andra Paruppu Podi (Powder)

Split chick peas (Pottukadalai) - 2 cups
Dry red chilly - 25
Cumin seed - 2 tbsp
Garlic - 15 pods
Asafoetida - 2 pinch
Salt - to taste

Methods of Andra Paruppu Podi (Powder)

Heat pan, roast red chilly and fry untill the change color.

Then add and roast cumin seed untill the change color.

First grind the red chilly and cumin seed, then add split chick peas(pottukadalai), garlic pods, asafoetida and salt.

Grind all the ingredients in to a fine powder.

Store it in an airtight container when it cool.

Serve Andra Paruppu Podi (Powder) mixed with hot steam rice and add required oil
to taste.

Chicken Curry

Ingredients of Chicken Curry

Fresh Chicken pieces (with bone) - 1 cup
Cinnamon stick - 4
Cardamom - 3
Aniseed - 1 tsp
Cloves - 4
Ginger garlic paste - 1 tbsp
Chopped onion - 1 medium
Chopped tomato - 3 medium
Green Chilly - 4 slited
Chilly powder - 1 tbsp
Coriander powder - 2 tbsp
Curry masala powder - 1 tsp
Mint leaves - few
Coriander leaves - few
Lemon juice - 1 tbsp
Oil - as required
Salt to taste

Methods of Chicken Curry

Heat pan with required oil, add whole spices, onion, chilly, Mint leaves, tomato and saute well.
Then add ginger garlic paste, saute till the raw smell goes off.
Add chicken pieces , mix and saute well for 5 minutes.
Add Chilly powder, Coriander powder, Curry masala powder and salt, mix well.
Reduce the flame and cook for 10 minutes as the chicken cooked.
Then adjust the water if the chicken curry starts to gravy consistence.
Remove chicken curry from the fire add the lime juice.
Finally garnish the chicken curry with the coriander leaves.
Serve hot chicken curry with hot steam rice, chapati, idly, dosa and nan.
